1/4 c boiling water
1 packet sugar free lime gelatin
2 containers of WW key lime pie yogurt (or a comparable fat free key lime yogurt)
1 container of low fat whipped cream
1 reduced fat ready made graham cracker pie crust
prepare the gelatin (I usually boil the water, pour it into a mixing bowl and whisk the gelatin powder in, although there is probably a better way to do it), whisk in the yogurt, and fold in the whipped cream. pour into ready made pie crust and refrigerate for at least 4 hours.
OM NOM NOM! :)

Weight watcher's recipe for key lime pie is the best (low fat) dessert ever!
My actual favorite dessert is banana pudding. Followed closely by vanilla cake with chocolate frosting and chocolate chip cookies. Oh, and frosted cut out cookies. But, those are terrible for you, so this weekend I'm rejoicing in my delicious key lime pie.
So, what are some of your favorites? Any healthy or low fat favorites out there?

We are headed out to Ohio (Cincinnati) for a wedding! It's a quick trip during which we are at the mercy of our friends for transportation, so I am sad that I won't be able to meet up with any of my Ohio friends. I'll be thinking of you all though :) Please pray for safe travels. We will be back, Lord willing, on Sunday.

Looks like I'm jumping on the end of this bandwagon :) I'm woefully behind on my blog and everyone else's as well! Anyway, I was tagged. I thought of 8 random facts, but also decided to think of some corresponding blessings.
- FACT: When I was 1 year old I was able to say about 100 words. Including “cookie” :)
- BLESSING: I have a beautiful niece who I love, and who can also say cookie :) (and Holly. and sock. and other cute stuff)
- FACT: I was valedictorian of my 149 student high school graduating class
- BLESSING: I have parents and friends who support me and encourage me to excel.
- FACT: I do not like going to libraries unaccompanied. They make me nervous and uneasy.
- BLESSING: I have a husband who will go to the library for me (or with me) for books I request (and some surprises that he picks out!)
- FACT: I can’t stand the font comic sans. It makes me very unhappy.
- BLESSING: I’m fortunate to have a graphic design job that I love at which I rarely come across comic sans :)
- FACT: I want a lot of pets. I have a dog Scarlett (who lives with my mom) but would also like to have a bunny, a chinchilla, a hedgehog, a sugar glider, a lizard, a fennec fox, a squirrel, and perhaps a mouse. And maybe a goat. And a bird? Oh! And a turtle or tortoise.
- BLESSING: My wonderful mother is taking great care of my little dog until I can get an apartment that allows pets
- FACT: I’m allergic to nature. Almost all of it. Trees, grass, mold... you name it, it makes me sneeze (or itch)
- BLESSING: I have a cozy, cute apartment that keeps me out of nature and a Neti pot for the sinusy days :)
- FACT: I’m really bad at taking my medicine and vitamins. I forget, don’t feel like it, run out and don’t refill, etc. I had 2 rounds (of 12) of allergy shots before I stopped finding time to go. I’ve been out of cholesterol meds for a month. I am a HORRIBLE patient.
- BLESSING: My health problems are minor and I am generally a healthy person.
- FACT: I do not like adrenaline rushes. I do not like being scared (scary movies, haunted houses, spider encounters, etc.), I do not like roller coasters or fair rides, and I do not like public speaking. Name another source of an adrenaline rush and I probably do not like it :)
- I can’t think of a blessing that directly corresponds to this, so I'll think more generally. I’m thankful for God, my husband, my family, my spiritual family, and my friends. I live a very blessed life.

I'm headed to the Carolinas tomorrow to see several friends, including one of my very dear friends from FC (I hope to travel to see all of my old friends from FC at one point or another! I really miss all of you so much). Please pray for my safe travels- the more I fly the more terrified of it I become. Don't know why.
Also please pray for my good friend and co-worker Sophia and her daughter Zoe (10 years old). Her husband passed away Monday night suddenly from some physical complications brought on by a long battle with bipolar disorder. I am so, so sad for them.
