First,you get the story behind the pie! ;)
I am the youngest of 6 children and there was a man who sold produce. Every once-in-a-while he would donate large amounts of various kinds of produce to our family, just to be kind. I sometimes wonder, but am very thankful, why my family? This one time he brought 50 lbs of onions!
Both of my parents owned their own business and my oldest sister, Debbi, did most of the cooking. Of course, we were not allowed to let anything go to waste because, 1. My mom was a child of the depression, and 2. There were starving children in the world. So, my sister came up with this recipe and even got it published in a cookbook. :)
Debbi found out she had leukemia at the age of 36 and died 19 months later. Whenever I 'cry' while slicing the onions, I am really shedding tears in Debbi's memory and thankful to the produce man for giving me such a wonderful memory of my sister!
(It doesn't matter what kind of onions. I like to mix some sweet with regular yellow onions)
Pastry for 9 inch double crust pie
4-5 medium to large onions, peeled and sliced into rings
2-3 Tbls butter
salt and pepper
thin-medium white sauce (1 Tablespoon butter and flour. 3/4 cup of milk. In a small saucepan melt butter, add flour. Stir until mixed. Add milk all at once. Cook and stir over medium heat until the sauce starts to thicken. Cook another minute)
dash of nutmeg
Saute onion rings in the butter, add salt and pepper to taste. Saute onions until translucent.
Put bottom crust in pie dish. Add onions to bottom crust. Make white sauce, add nutmeg and stir. Pour on top of onions. Cover with top crust and vent crust.
Bake at 350 for 35-40 minutes or until crust is golden brown.
Serve hot.

We had a wonderful Thanksgiving. We were treated like family, by our spiritual family. It was nice and we felt like we were at home.
I made a traditional dish that our family always eats. I think that I've talked about it before, but, it is Onion Pie. It is not a dessert pie, you eat it with the main meal. Anyway, everyone was very curious about it, but, it was a hit and I was told it was now a traditional dish and I will have to bring it again!
Friday morning I went shopping early. Left the house at 7:00 am. I went with Jamie Baker, she was having Thanksgiving with her boyfriend's family. It was her first Thanksgiving away from her parents. She usually goes shopping with her mom, so I went with her. I agreed as long as it wasn't to early! We had a great time, got $2 moives at Wal-Mart and I got a great winter jacket for my husband (he doesn't get on Pleo so this is not a spoiler!) at Macys. It was regularly $280 and I got it for $49.99! Wooo-hooo!!!
Tomorrow is December 1st! Wow, that means in a little over 3 weeks, it will stay light out longer! Yay!

Well, as hard as it was to leave the East Coast, it is just as wonderful to be back home. My husband had dinner made, flowers and a card on the table and put fresh towels out in case I wanted a long soak in the tub! He is soooo sweet and I missed him very much. Truly, there is no place like home.
Thank you for allowing me to come and share 3 1/2 weeks with you. It was such a blessing to me to be there and help out. I love your family very much!
The airplanes were full already on my flights, so, if you're traveling for Thanksgiving, have a safe flight. If you're flying Southwest with more than one person in your group, be sure to check-in online as soon as you can so you can sit together!
